Its slightly bitter, crisp texture and unique taste make it a perfect ingredient, especially for balancing pitta. Today, I want to share a simple yet deeply nourishing recipe: Endive Boats, a dish that supports all three Ayurvedic doshas—Vata, Pitta, and Kapha. This recipe is not just about taste; it's about energetic balance.

With a mix of raw and cooked ingredients, we create a meal that soothes, grounds, and nourishes your body holistically.

 Ingredients You'll Need:

1 tablespoon ghee

½ cup squash, diced

 ½ cup celery, chopped

 ½ cup carrots, chopped

½ cup yams,

diced ¼ cup onions,

chopped ¼ cup raisins

 A pinch of salt

1 head of yellow endive

1 head of red endive

Fresh basil leaves

10 black beans

 2 tablespoons hemp seeds

Step-by-Step Guide to Making Endive Boats

  1. Sauté the Veggies Start by adding a tablespoon of ghee into a warm pan. The rich aroma of melted ghee is instantly grounding—especially beneficial for Vata. Then, toss in your chopped squash, celery, carrots, yams, and onions. Let them sizzle in the pan, releasing their natural sweetness. After a minute or two, add raisins to the mix. Stir frequently for another 3-5 minutes, allowing all the flavors to blend beautifully. Sprinkle a little salt for balance.
  2. Prepare the Endive Boats While the veggies cook, gently peel apart the endive leaves, keeping them whole. These will act as your "boats." I like to arrange the yellow and red endive leaves in an alternating pattern, giving a visual contrast that makes the dish even more appealing.
