Have you ever cooked with Amaranth before?

This powerhouse seed is not only rich in protein but is also incredibly nourishing for your digestive system. Let me walk you through a quick and easy recipe that’s perfect for all doshas—whether you’re Vata, Pitta, or Kapha, this dish will work wonders for you.

Ingredients:

  • 1 cup of amaranth
  • 1 1/2 cups water
  • 2 tablespoons of coconut oil
  • 1/4 cup sliced almonds
  • 1/4 cup dates, chopped
  • Optional: Maple syrup for extra sweetness

Instructions:

  1. Rinse 1 cup of amaranth and cook it with 1 1/2 cups of water. Bring it to a boil and let it simmer for about 15 minutes, uncovered, until it becomes soft.
  2. In a separate pan, heat 2 tablespoons of coconut oil and add 1/4 cup of sliced almonds and 1/4 cup of chopped dates. Sauté until the almonds turn golden brown and aromatic.
  3. Stir in the cooked amaranth into the pan and mix everything together.
  4. For a little extra indulgence, drizzle some maple syrup on top!

This breakfast is rich in protein, has the right balance of astringent and sweet flavors, and is gentle on your gut. It’s also particularly soothing for those with a Pitta constitution. Give it a try and feel the nourishment in every bite!
