Spring Salad with Golden Dressing 🌿

The Golden Dressing Your Spring Body Will Thank You For

Spring is here—and so is the perfect time to lighten up your meals, refresh your digestion, and reconnect with the rhythms of nature.

At Athreya, we believe that even the simplest rituals—like making a homemade dressing—can become deeply nourishing when rooted in Ayurvedic wisdom.

The Golden Ayurvedic Dressing

Warming, detoxifying, and gently stimulating, this dressing is especially ideal for Kapha types during the cool, heavy spring months. Made with seven powerful ingredients, this recipe is more than delicious—it’s balancing.

✨ Ingredients:

  • 3 roots of fresh turmeric

  • 3 inches of lemongrass (chopped)

  • ½ lime, juiced

  • 2 tbsp sesame seeds

  • ½ tsp whole peppercorns

  • 1 tbsp raw honey

  • Himalayan salt to taste

  • Water as needed for blending

🧡 Instructions:

  1. Add all ingredients to a blender.

  2. Pour in a bit of water to start.

  3. Blend until smooth, adding more water as needed to get your perfect consistency.

  4. Store in a glass jar in the refrigerator.

This vibrant golden dressing pairs beautifully with raw or lightly steamed veggies, grain bowls, or even warm spring salads. The turmeric brings a deep earthiness, while lemongrass and lime cut through with brightness. The sesame seeds add depth, and the honey and pepper work synergistically to awaken Agni—your digestive fire.

🥗 Ingredients:

  • 3 tbsp chopped green onions

  • ½ cup finely chopped carrots

  • Golden dressing (as above)

🌱 Instructions:

  1. Lightly sauté asparagus just until tender-crisp.

  2. In a large bowl, combine asparagus, green onions, carrots, and cabbage.

  3. Drizzle generously with golden dressing.

  4. Toss to combine and serve warm.

This dish is a celebration of color, texture, and seasonality. According to Ayurveda, we eat first with our eyes—and this rainbow of spring produce, dressed in golden warmth, is a visual and nutritional feast.

🕊️ Ayurvedic Wisdom for the Season

Spring is Kapha season—cool, damp, and heavy. This is the time to favor warming, light, and stimulating foods that support detoxification and revitalization. Sesame oil and pepper stimulate movement, while the bright citrus and vibrant turmeric help clear stagnation.

A note of caution:
Fresh turmeric is powerful and heating. While Kaphas can really benefit from it in the spring, Pittas—especially in warmer climates or seasons—should use it in moderation.

This is nourishment that knows your body.

This is food that heals.
