It is a summer breakfast that comes together in about ten minutes: whole wheat sourdough, toasted warm, with olive oil, hummus on one and goat cheese on the other, then avocado and cherry tomatoes from the garden, and a few green olives. The Idea
Why is this a summer breakfast?
Because every single thing on it is at its best in summer. That is the whole idea of the dish, and Jay says it plainly:
"But all of them are summer, right? Tomatoes are summer. Avocado in my garden is growing summer. And then we have the cheese, the goat cheese, that we are doing it in summer. So these are the things that we are gonna use to make this amazing toast."
The Bread
Is sourdough easier to digest?
In Ayurveda, fermenting a food makes it lighter to digest, and sourdough is a fermented bread. Jay uses whole wheat sourdough for both the fermentation and the fiber:
"Sourdough is actually a fermented bread. So when you ferment something in Ayurveda, we say it becomes lighter to digest. So we have sourdough that's now with fiber, because it's whole wheat."
The Olive Oil
Why olive oil in summer?
A little olive oil goes on the warm bread, and again at the very end. Jay keeps it simple: "Olive oil is one of the best things to eat in summer too." It also carries the Mediterranean thread that runs through the whole toast, a tradition he trusts because "they've been proven to be safe."
The Build
Hummus or goat cheese?
You make two, one each way, and you decide which you like. The hummus one comes with a little red bell pepper in it. Jay lets you choose:
"One, we will do it with goat cheese. One, we'll do it with hummus, and you make a choice which one tastes good."

Why heat your bread first?
Whatever bread you buy, warm it before you build on it. It is a small habit with a real reason behind it:
"If you buy any bread, you need to heat it up. Heat it up until it becomes nice, warm, and toasty. Because we don't know what all things can get attracted on these surfaces, because they are very rich in nutrients, and heating them makes it safe."
The Tomatoes
Should you eat tomatoes out of season?
Jay eats tomatoes when they are growing in nature, and the rest of the year he leaves them. The cherry tomatoes here are from his own garden:
"These fresh tomatoes are best in this season because they are growing in the nature. So it's a great time to have them. I'm not a 365 days a year tomato guy. I eat tomatoes when they are in season, starting from late spring to almost early fall. That's when I eat all of them."
The Goat Cheese
Is goat cheese a probiotic?
It is one of the reasons Jay reaches for it, and it is a favorite at his house. In his words: "My son loves these toasts as well, because it doesn't take much time at all. The goat cheese is also a great source of probiotics and prebiotics in it."
The Avocado
Is an avocado a fruit or a vegetable?
Both, really, and Jay's is straight from the backyard:
"Avocados are unique fruits, and they can be considered as vegetable or as a fruit. It's so juicy. Whenever you get a healthy, fresh avocado, it's such a great sight. It's so bright in colors and yummy in taste."
The Salt
Why less salt in summer?
The olives are already salty, and so is the goat cheese and the hummus, so nothing more is needed. Jay's rule for the season: "Because the olives are salty, I'm not doing any more salt on this. So this will be nice and savory already. Lesser the salt, better it is during the summer season."

Avocado toast, which is my favorite summer breakfast, which my wife does so well in her kitchen. So I've stole her recipe, and then I'm presenting in front of you. You should do it, and then tell me how quick it was to fix this breakfast.
So let's turn on the heat. I'm gonna turn the heat on on this burner, and then I'm gonna wait until the pan gets warmer, and then I'm gonna place these breads, like sourdough bread, which is amazing. It's whole wheat sourdough bread.
Bread becomes nice and warm and toasty. I'm gonna add a little bit of olive oil. Olive oil is one of the best things to eat in summer too. Sourdough is actually a fermented bread. So when you ferment something in Ayurveda, we say it becomes lighter to digest. So we have sourdough that's now with fiber, because it's whole wheat.
And then I'm going to add some hummus on top. I'm gonna spread the hummus when it's ready, and then cut the avocado on top, and then a little bit of goat cheese. So one, we will do it with goat cheese. One, we'll do it with hummus, and you make a choice which one tastes good. And then we have some avocado that's going on. And these tomatoes, look at these beautiful tomatoes. These are the tomatoes from my garden. So these are cherry tomatoes, and they are so yummy. So these tomatoes need to be, they're washed, but maybe a little wiping, because they have still some goodness of soil on them. Okay, so that's the tomatoes that I'm gonna use to put it on the top. And one of them, I'll use olives as well to give it a different taste and flavors.
But all of them are summer, right? Tomatoes are summer. Avocado in my garden is growing summer. And then we have the cheese, the goat cheese, that we are doing it in summer. So these are the things that we are gonna use to make this amazing toast.
So it's already getting warm. I'm gonna turn this and then flip it, and then see if it is, oh, it's getting nice and warm. I love that. So it's when it's warm, always remember, if you buy any bread, you need to heat it up. Heat it up until it becomes nice, warm, and toasty, okay? So because we don't know what all things can get attracted on these surfaces because they are very rich in nutrients and heating them makes it safe.
My toast is almost ready. I'm going to leave it like this, and then I'm gonna pour a little bit of olive oil on the top, tiny bit. You can see one and two. So that's my olive oil touch to it. And I know that it's gonna steam now because it's heated. So that's how it's ready, okay? I'm gonna push this burner away because it's now done heating. I'm gonna keep it away. And then I am going to now start prepping my toast. So I'm gonna keep those tomatoes here, and I'm gonna take the board. So here, here comes my toast. It's definitely hot. So that's why I said, so this is ready here. So the small one, I'm gonna do it with goat cheese. The larger one, I'm gonna do it with hummus. So let me put the hummus first. So this hummus comes with a little bit of bell pepper, red bell peppers. That's what this has.
Olive oil and hummus are part of some traditional cuisine, which is Mediterranean. That's why I'm using it. So I don't vary it a lot from traditional meal preps because they've been proven to be safe. So the next one I'm gonna do is with our goat cheese. So I'm gonna take a little goat cheese here. So I am going to apply the goat cheese on one of this. So here comes the goat cheese.
My son loves these toasts as well because it doesn't take much time at all. The goat cheese is also a great source of probiotics and prebiotics in it. So that's that. And now it's time to add the avocado. So for adding the avocado, just cut the avocado and then look at that. It's such a great avocado right from my backyard. So I'm gonna just cut it.
So avocados are unique fruits and they can be considered as vegetable or as a fruit. So both of them are going to get some avocados. So I'm gonna spread the avocado on top. It's so juicy. Whenever you get a healthy, fresh avocado, it's such a great sight. It's so bright in colors and yummy in taste. So I'm gonna take this seed pit out and then continue to put some more on this. So it's very aesthetically beautifully looking. That's what this sandwich is all about or toast all about. So now it's time to add the tomatoes. So I'm gonna put the tomatoes on top just to stud it like that. All right, this is getting to be so beautiful. So let me cut these.
So these fresh tomatoes are best in this season because they are growing in the nature. So it's a great time to have them as well. So I'm not a 365 days a year tomato guy. I eat tomatoes when they are in season, starting from late spring to almost early fall. That's when I eat all of them.
So I'm gonna cut some olives and then put the olives as well. Sometimes you can add some black pepper and salt to it. Because the olives are salty, I'm not doing any more salt on this. So this will be nice and savory already. And then the goat cheese is a little savory. Hummus is a little savory. So, you know, lesser the salt, better it is during the summer season.
So now look at these beautiful two toast that I have for you, right? So one with the goat cheese, another one with the hummus. So if you try this, it usually takes about 10 minutes. And you wake up in the morning, you don't know what a breakfast is gonna be. Just this so quickly can be fixed. And that's what I love. And Anu does this, my wife does this. She just makes it quickly. And then I'm ready to run out of the door after eating this, having a quick chat with her.
So let's take a quick bite. So I'm gonna take a bite in this one. And then I'm also gonna take a bite in this one as well. So let's go for this. First, I'm a big goat cheese guy. So I'm gonna taste the goat cheese first and tell you, of course, I know how it tastes, but just for your experience, I'm gonna tell you how awesome this is.
Just explosion of flavors and textures in my mouth. Makes me exciting in the morning when you have this breakfast. The next one coming along is the hummus one. So let me taste this. Mm, such different flavors, but still the texture is the same. When it is a completely satisfying breakfast, that's what I call this.
